The tropical persimmons can only be enjoyed at optimal ripeness. When unripe, they are "chalky", but ripe, they are melt-in-your mouth sweet.
The best way to tell if your persimmon is ripe is by softness. It will also darken significantly in color and be soft enough to burst with a squeeze.
The persimmon all the way on the right is the only persimmon that is ripe. All of the other persimmons are at various stages in the ripening process.
